ARLY’S FIRST LADY SALAD
When I served this to my “Stitch and Bitch” quilting cluster, they decided it was too good for a salad and should be considered dessert.
Everyone liked it so well, I make it almost every time it is my turn to have the group at our house.
Combine:
2 small packages lemon, peach or apricot Jell-O
4 cups boiling water
8 large marshmallows
Stir until marshmallows are dissolved. Then add:
1 cup drained crushed pineapple
1 can Royal Anne cherries, drained
2 sliced bananas
To make the topping, mix the following in a saucepan and stir constantly until mixture thickens:
½ cup sugar
2 tablespoons flour
2 eggs beaten lightly
1 cup juice which was drained from fruit
2 tablespoons butter
When cool, fold in:
1 cup whipping cream, whipped until stiff
Spread on top of the salad (after Jell-O has set, of course) and sprinkle with nuts.
The last time I made this salad I couldn’t find Royal Anne cherries, however, I did find a can of “DelMonte California White Peaches” so I used them with peach Jell-O and the result was just as good.
