CONFETTI CHICKEN

This is one of my favorite recipes. I received it from my friend and co-worker at Blue Shield, Erma.

Erma and Nate were responsible for talking us into taking square-dance lessons.

I finally convinced Jim that if we went just once, and he didn't like it, I'd never mention it again.
After two sessions he was hooked and the rest is history.

There were times when we danced four or five times in a single week-and enjoyed every minute.

Season a cut-up fryer chicken with salt and pepper and brown the pieces in 1/4 cup of oil.

Combine and pour over the chicken:
1/2 cup chopped onion
1 clove garlic, minced
2 cans chopped tomatoes
1 small can tomato sauce
2 tablespoons chopped parsley
1 teaspoon chopped basil
3/4 teaspoon pepper

Cover tightly and simmer for 1 to 1 1/2 hours. Serve over cooked spaghetti.

Sprinkle with parmesan cheese.

NOTE: This is a very good way to cook chicken. If you are feeding a large group, just double the amount of chicken called for in the recipe and use the same amount of sauce. I have found that a package of spaghetti sauce mix combined with a large can of chopped tomatoes and 1/2 cup of barbecue sauce is just as good. Instead of simmering on top of the stove, bake it in the oven for the same length of time. The chicken is just as good and it's much less trouble!
