CREAMED NEW POTATOES WITH PEAS
This was something we always looked forward to when we had a big garden.
Even without a garden, it’s easy to fix.
Peel, cut into medium size chunks, and boil potatoes with salt, a bay leaf, and a couple slices of onion until potatoes are barely tender.
If you can get new potatoes, that’s great; otherwise, use red ones.
Drain every last bit of moisture from the potatoes.
While the potatoes are cooking, make a white sauce using 4 tablespoons of real butter, 4 tablespoons of flour, and two cups of half-and-half. Season to taste with salt and white pepper.
When the sauce has thickened, add a cup of fresh (or frozen) peas and cook for a couple of minutes, stirring constantly to keep from sticking and burning.
Pour the sauce over the potatoes. I like fried chicken with my peas and potatoes. Don’t even think about counting the calories.
