NORMAN MIKELSON’S SAUTEED ZUCHINNI

The first time I ate fried zucchini, Norman fixed it for dinner at his parents’ home in Missoula (Myrl and Louella).

Chop two or three slices of bacon and cook until crisp.

Add sliced small zucchini, a chopped onion, and sliced mushrooms.

Sauté until everything is tender-crisp. Salt and pepper to taste.

When Jeff fixes this dish, he mixes yellow and green zucchini, and he adds a little fresh basil.
