SCANDINAVIAN MEATBALLS
These are good when they are served with either mashed potatoes, rice, or noodles. I don’t usually use a recipe when I make these so I had to look, and found it in my copy of Scandinavian Home Cooking.
Mix together thoroughly, using your hands if necessary:
1 pound ground beef
½ pound pork sausage
1 cup bread crumbs
1 egg
½ cup milk
¼ cup grated onion
½ teaspoon allspice
¼ teaspoon pepper
1 teaspoon salt
1 teaspoon sugar
Form into small balls and brown in a greased frying pan, turning to brown on all sides.
Place in an oven-safe casserole and add a can of mushroom soup and a soup can of water.
If you like browner gravy, add a few drops of “Kitchen Bouquet.”
Cover and bake for an hour at 350.
Grandma sometimes substituted oatmeal for the bread crumbs.
