SQUASH BLOSSOMS
Pick fully opened squash flowers from a zucchini plant.
Remove the center and wash thoroughly to assure there are no little bugs hiding inside.
Wrap the blossom around a small chunk of cheese and dip into a beaten egg.
Fry slowly, preferably in butter or margarine, until light brown.
These are so good.
A word of caution: don’t pick all of either the male or female flowers. If you do—no squash later on. I once made the mistake of picking all the male flowers (the ones that don’t have a lump at the base) and the result was also “no squash.”
