TWICE BAKED POTATOES
Choose medium-sized baking potatoes and bake in the oven until tender.
Cut a slice from the top of each potato and scoop the potato pulp into a bowl and mash with about 2 tablespoons sour cream for each potato.
Add salt and pepper, some chopped green onion, bacon bits and shredded cheese.
Refill the potato skins.
Place additional cheese on top of each potato.
Bake until potatoes are hot and cheese has melted.
