Date Swirls

This is my family's favorite and we always have them at Christmas. the recipe says "100 Cookies" and it seems that no matter how many times I make them, I always get 100 cookies.

Filling:
2 cups chopped dates
1 cup water
1 cup sugar
1 cup chopped nuts
2 teaspoons lemon juice

Simmer a few minutes until thick.

Let cool.

1 cup butter
1 cup brown sugar
1 cup white sugar
3 eggs
3/4 teaspoon soda
1 teaspoon salt
1 teaspoon lemon extract

Roll dough thin.
Spread with filling, roll up and keep in refrigerator overnight.
Slice 1/4" thick and bake.
375 until light brown.
