ARLY SPECIAL PORK CHOPS

Purchase the number of pork chops needed to feed the number of people you have for dinner. I usually figure on two pork chops per person.

Season with salt and pepper, place a whole clove in the fat of each pork chop, then roll in flour and brown in oil. Place in baking pan.

Slice or quarter as many apples as you wish and place over the chops. (Peeling is optional.)

Sprinkle generously with brown sugar.

Make gravy in pan the chops were browned in:
1 tablespoon vinegar
2 cups hot water
Thicken with 2 tablespoons cornstarch dissolved in ¼ cup cold water
½ cup raisins

Pour over chops and bake at 250 (that’s right, 250) for 1½ or 2 hours or until chops are tender.

Note: This recipe is unusual, but, oh-so-good! Serve with mashed potatoes, rice, or noodles.
