BONNIE'S PEPPERMINT PIE
Bonnie and Jim are Barbara’s in-laws, parents of her husband, Bill. We have had many good meals at their home in Bozeman. I had never heard of peppermint pie until Bonnie brought it to our house for a holiday dinner. We were saddened when Bonnie passed away in November of this year.
The recipe will make two 8-inch pies.
Two days before you plan to serve the pie, whip one pint of cream until it is very stiff.
Fold in:
24 large marshmallows cut into small pieces. I recently read that it takes 10 marshmallows to fill a cup. According to that formula, I think that two and a half cups of miniature marshmallows would work fine.
½ cup crushed peppermint candy.
Pour into two graham cracker crusts and refrigerate until serving. The original recipe called for “two 5-cent peppermint sticks.”
Bonnie said she thought this would probably equal a half cup of candy. The peppermint melts and looks very pretty when the pie is cut to serve. This is a nice refreshing dessert to serve after a large meal.
