CHEESE SAUCE
Add about a cup of cheddar or parmesan cheese (or a combination of the two) to the basic white sauce.
This is good over vegetables like broccoli or cauliflower.
When Grandma worked at Lowe's Restaurant in Portland, they placed a scoop of this over servings of spaghetti instead of sprinkling with parmesan.
I still make this sauce when we have spaghetti.
