CHICKEN AND RICE
This is an easy way to fix chicken. And the rice makes it a whole meal. Just add a vegetable or a salad.
Some recipes bring back memories of special meals and this is one of them. The last time I saw my cousin Ray in Glendive, Arly, Royce, and I were visiting and Carmen fixed chicken this way for dinner.
Ray commented all the way through dinner on how good the chicken was and how his appetite had improved considerably. We spent a lovely evening with them and had a good time reminiscing about the 'good old days.' Ray passed away just a few days later.
Combine:
1 can cream of mushroom soup
1 1/2 soup cans of milk
1 cup uncooked rice
1 can mushrooms with juice
1/2 package of onion soup
Reserve a half cup of the above mixture. Line a 9x12 baking pan with foil (otherwise you will have a very sticky pan to clean).
Pour the rest of the rice mixture into the pan.
Top with:
4 or 5 chicken breasts or one small cut-up chicken
reserved soup-rice mixture
Sprinkle with:
The rest of the onion soup mix
Cover with foil and bake at 350 for one hour. Uncover and bake 15 minutes longer until slightly browned on top.
