PINEAPPLE CAKE
This recipe came from Dave’s old friend, Darlene. It makes a nice moist cake and is easy to put together.
Beat with a wire whisk:
2 eggs
Add the following ingredients in the order given; beating well after each addition (Beat by hand, don’t use a mixer):
1 20-ounce can crushed pineapple, including juice
2 cups flour
1 cup white sugar
1 cup brown sugar
2 teaspoons baking soda
1 cup chopped walnuts
Pour into a greased 9x13 pan and bake at 350 for 45 to 50 minutes.
For the frosting, combine a small package of cream cheese, ½ cup butter, 1 teaspoon vanilla, ½ teaspoon ginger, and 2 cups powdered sugar.
Sprinkle with chopped nuts.
